One of my favourite snacks lately is Coconut Oil Popcorn. I make it right on my stove top and in less than five minutes we are happily munching away on a bowl of healthy, whole food goodness.

COCONUT OIL POPCORN

Why make popcorn using coconut oil? The simple answer is Costco.

Lol.

I have huge tub of coconut oil to use up so it’s going into this popcorn recipe.

You could also use olive oil or avocado oil. Both are fine when they get hot. Avoid oils that shouldn’t be heated like flax or walnut.

Please stay away from palm oil for ethical reasons.

I am doing a special low sugar, no wheat and no dairy regime for a little while to try and clear up these recurring colds I seem to always catch so my snacking options can be pretty limited but a nice bowl of Coconut Oil Popcorn keeps my naturopath happy and my munchies monster satiated.

My topping of choice is simple: a nice little blanket of melted butter. I’ve also had success with a little sprinkling of salt and cinnamon if you want to keep things sugar free and in the healthy spectrum.

Coconut Oil Popcorn

A healthy and inexpensive treat, this Coconut Oil Popcorn recipe will become your go-to snack. So easy to make and customize to your taste buds. Gluten Free + Vegan!

  • 1/4 cup coconut oil
  • 1/2 cup popcorn kernels
  1. In a large saucepan with a tight fitting lid, heat the coconut oil over medium heat until it has liquefied. Toss in a single kernel of corn. If the oil sizzles around it, it is ready to go!

  2. Add the popcorn kernels to the hot oil and stir with a wooden spoon, coating the kernels with the oil. Spread the kernels evenly across the bottom of the pan and cover with the lid.

  3. The kernels will begin to pop. Once they slow to 2-3 seconds apart remove from the heat and give the pan a good shake to keep any kernels from burning. Shake until the popping stops completely. 

  4. Remove the lid and pour the popcorn into a large bowl.

    Top with desired toppings.
